Roncione pecorino cheese is one of the most special and representative of the whole range produced by the Busti Family. It is prepared with the best fresh milk, processed raw to fully preserve its natural microbial flora. After an initial seasoning of at least 60 days in a cold room, it is transferred into the ancient cave of Roncione, the hilltop town from which it takes its name. The cheese will remain in the cave for at least 90 days and is laid on wooden boards and straw to let the bottom of the form breathe and protecting it from excessive moisture. This gives this cheese a unique flavor.
