Montasio DOP is a typical cheese of the Friuli region. Its seasoning requires a minimum of 60 days. It takes on a different flavor, appearance, color and consistency depending on the months of seasoning. It is available fresh, medium-ripened and very-ripened. As it ripens, the flavor becomes more aromatic, the crust more hard, the color is yellower and the texture becomes hard and crumbly. Montasio is the main ingredient of one of the most typical dishes of the Friulian cuisine, Frico, and is generally used in Friuli melted with polenta.
