Salame Felino is a pure pork salami from Felino, a small town located in the green Baganza valley (Emilia Romagna). This special salami is the product of the best pork meat and the particular microclimate of its production area, allowing it to age naturally due to the ideal temperature and right amount of humidity and ventilation. The fresh meat used to make the salami is carefully selected by Cavaliere Umberto Boschi from deboned shoulder and belly that is ground with lean and fat cuts of ham. The meat is only mixed with salt, spices, wine and garlic. After the meat is coarsely ground, salt, whole pepper grains and white wine are added. The salami is then stuffed by hand into a pork casing, which gives it its characteristic uneven width. It is then slowly seasoned and the final product should be soft, with a sweet taste and delicate aroma. The salami should be sliced with a knife , through an oblique cut and the slice should be no thicker that a pepper grain.
