Lumpfish roes are the best known fish eggs right after the caviar ones, compared to which, however, have far exceeded production and average annual consumption. The lumpfish (Cyclopterus lumpus) is a saltwater fish living in the North Sea that produces eggs aesthetically very similar to caviar, but with a less intense taste. For this reason, its eggs have reached a much broader market than sturgeon eggs, with respect to which they constitute the nearest and cheaper substitute. The lumpfish roe is also a basic of the Danish cuisine: normally they are cooked and paired to other fish and seafood products.
